GUATEMALA CITY - Lent no longer tops the list for Easter hardships. 
The annual Easter witch hunt began seven days prior to Holy Week this 
year for Guatemalan students. The ritual consists of 15,000 hooded 
students (mostly male) who publicly strip suspected criminals, and 
beat them. This vigilante pummeling, and the accompanying parade, are 
a sanctioned tradition where last year more than 108 lynching attempts
took place.

EASTER STORY COOKIES

To be made the evening before Easter, you need:

1 cup whole pecans
1 teaspoon vinegar
3 egg whites
pinch salt
1 cup sugar
zipper baggie
wooden spoon
tape
Bible

Preheat oven to 300F.
Place pecans in zipper baggie and let children beat them with the
wooden spoon to break into small pieces. Explain that after Jesus was
arrested He was beaten by the Roman soldiers. Read John 19:1-3.
Let each child smell the vinegar. Put 1 teaspoon. vinegar into
mixing bowl.Explain that when Jesus was thirsty on the cross he was
given vinegar to drink. Read John 19:28-30.
Add egg whites to vinegar. Eggs represent life. Explain that Jesus
gave His life to give us life. Read John 10:10-11.
Sprinkle a little salt into each child's hand. Let them taste it
and brush the rest into the bowl. Explain that this represents the
salty tears shed by Jesus' followers, and the bitterness of our own
sin. Read Luke 23:27.
So far the ingredients are not very appetizing.
Add 1 cup sugar. Explain that the sweetest part of the story is
that Jesus died because He lives us. He wants us to know and belong to
Him. Read Psalm 34:8 and John 3:16.
Beat with a mixer on high speed for 12 to 15 minutes until stiff
peaks are formed. Explain that the color white represents the purity
in God's eyes of those whose sins have been cleansed by Jesus. Read
Isaiah. 1:18 and John 3:1-3.
Fold in broken nuts. Drop by teaspoons onto wax paper covered
cookie sheet. Explain that each mound represents the rocky tomb where
Jesus' body was laid. Read Matthew 27:57-60.
Put the cookie sheet in the oven, close the door and turn the oven
OFF. Give each child a piece of tape and seal the oven door. Explain
that Jesus' tomb was sealed. Read Matthew 27:65-66.
GO TO BED! Explain that they may feel sad to leave the cookies in
the oven overnight. Jesus' followers were in despair when the tomb
was sealed. Read John 16:20 and 22.
On Easter morning, open the oven and give everyone a cookie.
Notice the cracked surface and take a bite. The cookies are hollow!
On the first Easter Jesus' followers were amazed to find the tomb open
and empty.

Chocolate Easter Eggs (2 centers)

Serving Size : 15 Preparation Time :0:15

----Chocolate Coating----
1 c semisweet chocolate disks -- melted
1 7 oz Hershey bar -- melted
----Peanut Butter Eggs----
4 1/2 c powdered sugar -- sifted
1 lb peanut butter
1 1/2 sticks butter
----Butter Cream Eggs----
4 ozs cream cheese -- softened
1/2 c butter
1 1/2 tsps vanilla
5 c powdered sugar --sifted

Chocolate Coating - In a double boiler, melt disks and Hershey bar.
Keep over heat as long as needed. Peanut Butter Eggs - In a small
mixing bowl, combine 4 1/2 cups sugar, peanut butter, and butter until
thoroughly combined. Then, form into small eggs. Refrigerate a short
time, about 1/2 hour on wax paper covered baking sheet. Dip in hot
chocolate coating, using a fork. Butter Cream Eggs - In a small mixing
bowl, combine cream cheese, butter, vanilla, and 5 cups sugar until
thoroughly combined. Then, refrigerate a short time on wax paper
covered baking sheet. Dip into hot chocolate coating, using a fork.

Give each child a plate and punch two holes at opposite ends and tie yarn so that the "Hat" can be secured and tied under the child's chin. 

Put out all the other supplies in such a way as all the kids can get to them. Encourage the kids to use different materials to decorate their hats. 

They can add flowers in the center, punch holes around the edges and hang cut out shapes from yarn tied through the holes, they can make their own tissue paper flowers and glue them to the hat and add glitter for some sparkle. Let them be creative, and have fun!!

EASTER SCAVENGER HUNT
The materials needed are as follows: any number of plastic eggs, paper, pen,
yard (which everyone has), and a lively group of kids that are ready to play
a fun and exciting Easter game. This game is played like the old yet still
fun game scavenger hunt. All you do is hide all the eggs in various places
in the yard. You put a different message is each egg. To start the game out
you give the kids a starting point. You give them the color of the egg they
need to find and a little description of the place where it is hidden. Then
you just sit back and enjoy watching the kids entertain themselves. To make
the game even funnier, the last egg will say where a prize is. This is a
option, but some good prize ideas are: stuffed bunny , money, toys,
chocolate egg or bunny (my personal favorite), or Easter basket full of
different goodies.

Easter Egg hunt
When my children were little we would hold 
traditional Easter Egg hunts in the back yard. 
We sent out invitations to family and friends
and the children always had a good time. 
Some of the things that I tried that worked well 
included:
*After each egg or treat were found the children 
had to come back to the deck to "touch base". 
That way the hunt wasn't over with too quickly. 
*Eggs were never hidden more than one step off 
the lawn to keep small feet out of my flower 
beds.
*There was one special egg that would hold a 
winning ticket to some predetermined special 
prize - usually a large stuffed animal.
*To make my garden more special I 'planted' lots 
of silk flowers in addition to the real ones.
This had an added benefit of improving the 
photographs.
*I had a lunch prepared buffet style after the
hunt for adults while the children ate their 
candy prizes.
One family I read about uses a variety of 
creative clues to lead children to there Easter 
Nest. Every year their creativity grew and now 
adults spend more time and get greater enjoyment 
out of the hunts. They've even included the 
Internet in the hunt.

EASTER BRUNCH LASAGNA

1/2 cup butter or margarine
1/3 cup all-purpose flour
1/4 teaspoon salt
Dash white pepper
3 cups milk
1/4 cup finely chopped green onions
1 teaspoon hot pepper sauce
9 lasagn noodles, cooked and drained
2 cups diced fully cooked ham
1 pkg (10 oz) frozen chopped broccoli, thawed
1/2 cups (12 oz) shredded cheddar cheese
4 hard-cooked eggs, finely chopped

In a heavy saucepan, melt butter over medium heat. Stir in flour,
salt and pepper until smooth. Gradually add milk. Bring to a
boil; cook and stir for 2 minutes or until thickened. Remove from
the heat; stir in onions, lemon juice and hot pepper sauce.
Spread a fourth of the white sauce in a greased 13-in. x 9-in. x
2-in. baking dish. Top with three noodles, half of the ham and
broccoli, 3 tablespoons Parmesan cheese, 1 cup cheddar cheese,
half of the eggs and a fourth of the white sauce. Repeat layers.
Top with the remai,ing noodles, white sauce and cheeses. Bake,
uncovered, at 350 degrees for 40-45 minutes before cutting.
Yield: 12 servings.

Here is a Bunny craft to make to go with the song:

Fill a paper bag with crumpled paper. Pull another bag of the same 
size over the top of the filled bag. Tie the bags together with 
string, making sure to leave enough on top for the bunny's head. The 
tied area is the neck. Cut ears and feet from cardboard, cover with 
colored construction paper and glue into place. Paint the bunny. Add 
paper eyes and mouth, maybe a yarn tie and a cute little cotton tail.

Here are a few tips to help you enjoy your Easter Lily:

· Choose a plant with dark green foliage all the way 
down to the soil line. 

· For a long season of blooms, choose a plant with one
or two open flowers, and six or more closed flowers
at various stages of maturity.

doesn't get too hot. Flowers will last longer at

Chocolate Bunny Trivia

Easter is a great holiday for self-declared chocoholics! The love for 
chocolate can be traced back through history. Chocolate has been called the 
food of the gods, and was highly prized in pre-Columbian times. Chocolate 
was served to European explorers as early as the 1500's and by the mid - 
1600's, the popularity of chocolate, sweetened with sugar had spread 
throughout Europe.

In 1847, milk chocolate was created. With the invention of the steam engine, 
chocolate could be mass-produced and reasonably priced. Today the average 
American eats more than 12 pounds of chocolate a year. 

Solid milk chocolate is high in fat, much of it saturated; it contains small 
amounts of caffeine and when eaten in moderation poses no real health risk. 
Eating a lot of chocolate is a high calorie habit, but contrary to popular 
belief chocolate isn't truly addictive or a cause of acne.

One ounce of milk chocolate contains 147 calories, 2 grams of protein, 9 
grams of fat (5 saturated), 0 mg of cholesterol, 65 mg of calcium, and 16 
grams of carbohydrate. Chocolate also contains magnesium and heart-healthy 
antioxidants.

RESURRECTION ROLLS

1 pkg. frozen rolls, thawed
25 large marshmallows
1/4 Cup melted butter or margarine
6 Tbsp. sugar
1 tsp. cinnamon

Preheat oven to 350 F. Press each piece of dough to flatten.
Place a marshmallow in the center of each roll. Pinch dough
around it and roll into balls. Mix together cinnamon and sugar in
a small bowl. Roll each ball first in butter then in cinnamon
sugar. Place on lightly greased baking sheet. Cover and let rise
for 30 to 45 minutes. Bake rolls for 15 minutes until golden.

Just like Jesus' tomb on Easter morning, these rolls are empty
inside!

RESURRECTION ROLLS II

Large Marshmallows
Melted Butter
Sugar/Cinnamon Mixture
Cans of crescent rolls

Open the can of crescent rolls and separate into triangles. The
rolls represent the linen wrapping used in covering the dead. Dip
and roll one marshmallow, representing Jesus' body, into melted
butter. The butter represents the oils used in anointing the dead
body. Roll the marshmallow in the sugar/cinnamon mixture. The
mixture represents the spices used in burials. Place the
marshmallow in the center of the crescent triangle. Fold and
pinch the edges tight. Put each crescent-wrapped marshmallow on a
slightly greased cookie sheet. Bake the rolls as directed on the
package. The oven represents the tomb. When cooked, the
marshmallow melts leaving only the puffed crescent roll. This
demonstrates how Jesus rose from the dead. All that remained in
the tomb were the linen wrappings.

Paska is a rich Easter dessert that's traditional among Ukrainians. It's a

1 cup Icing sugar 250 mL 
2 Egg yolks 2
1/2 cup Whipping cream 125 mL 
1 tsp Vanilla 5 mL
1/2 cup Finely chopped mixed candied fruit (approx) 125 mL
1/2 cup Toasted slivered almonds (approx) 125 mL 

In large bowl, beat cream cheese until fluffy. Blend in butter until smooth; 
beat in sugar and egg yolks. Blend in cream and vanilla; stir in candied 
fruit and almonds. 
Wash and dry a new clay flowerpot (about 6 inches/15 cm in diameter and 5 
inches/12 cm deep). (Alternatively, use sieve with 4 cup/1 L capacity.) Line 
pot with double layer of dampened cheesecloth, leaving corners hanging over 
edges. Spoon in paska mixture; fold overhanging ends over top. Cover with 
plate; set a weight on top to press paska into shape. To drain excess 
moisture, set pot on rack placed over pan; refrigerate overnight. 
Remove weight and plate; peel back cheesecloth. Invert paska onto serving 
plate. Peel off cheesecloth. Decorate with more candied fruit and almonds if 
desired. 
Makes about 8 servings.

Easter Basket

What you need: popsicle sticks, ribbon, craft glue or hot glue 
gun, green felt, yellow and white pompoms, pipe cleaner, white 
and orange foam, string, black marker.

Basket: use one popsicle stick for the top, lay in a fan like way 
7 popsicle sticks on top of it. break one popsicle stick in half and 
use for the bottom of the basket under the 7. Glue these in place, 
to form the basket. Glue one more popsicle stick on the top of the 
other side of the basket. Use the ribbon to weave in and out of 
the fan like area of the basket from the bottom to the top, filling 
the gaps in. Use the green felt and either cut in a zigzag way or 
use fancy scissors to make the green felt look like grass for the 
bottom of the basket. Glue in place around both sides. Make a 
bow with the ribbon to place in the middle of the top of the 
basket. Attach the pipe cleaner, for the handle,  in between 
the basket top slats on each side with glue. Cut the white foam 
into a rectangle and make the Happy Easter sign to hang down 
from the middle of the top handle of the basket and tie on with 
the string.

Little chick: Little yellow pompom and real small yellow pompom 
glue together for the body and head. Cut out a tiny orange beak 
and glue onto the head and use the black marker for the eyes. 
Glue onto the left, top side of the basket so it looks inward. 

Little white bunny: Little white pompom and real small white 
pompom glue together for the body and head. Cut out one piece 
of white foam to look like two ears as one piece and glue to the 
top of the bunny head. Use the black marker to make eyes and 
nose. Glue to the right, top side of the basket so it looks inward.

 

Bunny Ears

Things you need: construction paper, plain plastic headband, scissors, 
and crazy glue or hot glue which ever works best. 

Now cut out a pair of  small ovals and then a pair a little bigger 
than that one.  Then use elmers glue to glue them together and 
when it dries glue the ears to your headband and you will have 
Bunny Ears!!!!!!

 

Small Easter Baskets

Things you need: egg cartons or cardboard egg cartons,  pipe 
cleaner (any color.),  any colors of paint and glitter. 

Cut one egg carton hole out, take the pipe cleaner stick it in each 
side of egg carton hole. paint the basket any color you like. Take
the glitter and sprinkle the amount you want.

 

Holiday Baskets

Things you need:  leaf, pipe cleaner, egg carton and glitter 
and glue.

Take the egg carton holder, cut it out. Take the pipe cleaner 
stick it in the egg carton. Take the glue and put it in the places 
you want. Take the glitter and put it on. Take the leaf and put 
it on the front of the basket and take the basket and put it on 
your door. You can make it for many different holidays!

Small Easter Baskets

Needed Items:
1. Starch Can Lid
2. Green Scrap Paper 
   (Or White Scraps Colored Green)
3. Scissors
4. Pipe Cleaner Any Color
5. Some Kind Of Candy Egg
   (Cadbury, stuffed Eggs, etc..)

Directions:
1. Cut Green Paper Into Thin Strips With Scissors.
   (Each About 1/4 Inch Wide)
2. Fan Fold Each Strip.
3. Place Candy Egg In The Center Hole Of The 
   Starch Lid.
4. Place "Grass Around The Egg.
5. Glue Pipe Cleaner Inside, To The Sides
   To Form A Handle.

Ideas for Dying Easter Eggs

1) Wrap the egg with some rubber bands before dipping into 
the egg dye for a neat effect.

2) When still wet, place some colored tissue paper on the egg 
in different places and allow to dry. The tissue paper falls off 
once the egg is dry, and the dye from the tissue paper stays on.

3) Use vinegar to help the colors adhere to the eggs. Use 
natural dyes to dye your eggs. Beets can be used to make 
the dye red, blueberries for blue dye, coffee or tea for 
brown dye, etc. 

4) Use crayons to write on designs and once they are died 
the designs show. The dye does not stick to the waxy crayons. 

My Mom's Peanut Butter or Coconut Chocolate Eggs

These recipes bring back wonderful memories 
of years gone by. Every Easter, my mother 
made several batches of both the peanut 
butter and coconut ones. They were so good, 
and we loved to eat them frozen.

4 oz. cream cheese
1 stick margarine
1 tsp. vanilla
3 cups 10X sugar
1 cup peanut butter OR coconut (you may need more coconut)
chocolate for coating
(You can melt a little shortening or parafin 
wax with the chocolate to thin it, but DON'T 
add water or margarine.)

Mix all the ingredients together and shape 
into small balls or oval. Place the shapes on 
wax paper on a cookie sheet. Refrigerate for 
one to two hours. Melt chocolate in a double 
boiler and dip eggs into the chocolate to coat.

Suggestion: Instead of wax paper, I save my 
cereal box liners. I open these and put my 
candy on that.

Coconut Cream Eggs

6 T butter, melted
1/3 c. corn syrup
2 tsp. vanilla extract
1/2 tsp. salt
3 1/2 c. powdered sugar
3 1/4 c. (10 oz. pkg) coconut flakes OR 1 1/2 cups peanut butter)
chocolate for coating

Mix together butter, corn syrup, vanilla, and 
salt. Add the coconut and powdered sugar, 
and mix well. Shape into eggs and place on 
wax paper on a cookie sheet. Refrigerate a 
couple hours and coat with melted chocolate.

Easter Sweet Bread

1 cup milk, scalded
2 Fleischman yeast packets
1/2 cup warm water
1/2 - 3/4 cup sugar 
(depending on how sweet you want your bread)
1/2 stick margarine
4 eggs, beaten well
1/4 cup vegetable oil
5 - 6 cups flour

Dissolve 2 yeast packets into 1/2 cup warm water. 
Set aside. dd sugar & margarine to scalded milk & 
mix together until margarine & sugar are melted into 
the milk. Set aside. Mix 4 beaten eggs, milk mixture, 
yeast water, & vegetable oil together. Gradually begin 
adding flour until mixture is like bread dough - not hard.
Dump dough onto floured board & knead. Place in 
buttered bowl & cover with saran wrap & two towels. 
Put bowl in warm place & let rise for 2 hours.
Dump dough onto floured board & knead once or twice. 
If dough is sticky, add flour a little at a time until it is 
the right consistency. Roll dough into whatever shapes 
you want - for braids, roll out long, cut into 3 long pieces, 
& braid pieces together. Set in warmed oven & let rise 
until it doubles its size. If doing braids, they can be 
placed on a cookie sheet. Loaves will do just fine in 
bread loaf pans.

Remove from oven. Preheat oven to 350 degrees. 
Coat loaves/braids with an egg wash - 1 or 2 well-beaten 
eggs mixed with a little bit of warm water to take the 
chill out of the eggs. Bake for 20-25 minutes, or until 
loaves/braids turn a light golden brown - NOT TOO 
BROWN! Because it is a light dough, you don't want 
to overcook them. Braids/loaves can be drizzled with 
a pastel-tinted powdered sugar frosting to make them 
look festive!

Easter Nests

1 jar marshmallow cream
1/4 cup creamy peanut butter
2 tablespoons butter or margarine, melted
1 can chow mein noodles, 5 ounces
1 cup pastel M & M's
Confectioner's sugar

In a mixing bowl, beat marshmallow cream, 
peanut butter and butter until smooth. Fold 
in noodles and M & M's. Chill until easy to 
handle. On waxed paper, form mixture by 
1/3 cupfuls into 3 inch nests. Chill for 30 
minutes. Place several M & M's in each 
nest.

Giving Day 

The Thursday before Easter is called Maundy Thursday. "Maundy"
comes from a latin word that means commandment. On the Thursday before he
died, Jesus commanded his friends to love one another.

Maundy Thursday can be a special time for letting others know that we care
about them. Here are some ideas:

1. Collect cans or newspapers for recycling. Donate any money you earn to
local groups that help needy people. 

2. When your family buys the food for your Easter dinner, ask if you can pick up extra canned meat and vegetables and packaged desserts. Donate these to a food pantry.

3. Donate pet food to an animal shelter. (Call first to see what they like to feed the animals)

4. Fill a basket with treats and toys. Take it to the children's unit of a hospital to be handed out on Easter morning.


Easter Egg Safety

Since eggs are high in protein, certain safety precautions
should be taken when preparing them for the holiday. Always
check each egg for any cracks before cooking. Don't forget
to check the expiration date on the carton. Thoroughly wash
your hands before handling eggs. Eggs should be hard-boiled
(actually simmered) for 12 to 15 minutes. Even after
cooking and dying, the eggs should never be out of the
refrigerator for long periods of time (two hours maximum).


Hot Cross Buns

These slightly sweet rolls are an Easter tradition in many
families.

Makes about 2 dozen

1 cup Milk
8 Tablespoons Butter
1/2 cup Sugar
1 teaspoon Salt
1 package (1/4 ounce) Dry active yeast
2 Eggs
4 cups Flour
1 teaspoon ground Cinnamon
1 cup Raisins
Egg white
Powdered sugar
Lemon juice

Scald the milk (bring to just under a boil). Stir in the
butter, sugar and salt. Cool slightly. Whisk in the yeast
and allow to sit 5 minutes. Lightly beat 1 egg and add to
the mixture. Sift the flour and cinnamon together. Add to
the wet mixture to form a dough. Fold in the raisins. Cover
and let it sit in a warm place for 2 hours. Lightly oil a
cookie sheet. Form the dough into large buns. Return to a
warm place for 1 hour. Pre-heat the oven to 400. Brush the
tops of the buns with the other beaten egg. Bake for 20
minutes. Cool. Make a cross on top of each bun with an
icing made of an egg white, powdered sugar, and a dash of
lemon juice (blend them until a thick icing forms).


Coconut Cream Eggs 

1/2 Cup Butter Or Margarine -- Softened
1 tsp Vanilla Extract
1 tsp Salt
2/3 Cup Sweetened Condensed Milk
6 Cups Confectioner's Sugar
3/4 Cup Sweetened Coconut Flakes

Chocolate Coating:
8 - 1 Oz Baking Chocolate Squares
1/3 Slab Paraffin Wax

Cream butter, vanilla and salt. Blend in milk and mix until smooth. Add
sugar ( slowly ) and mix well. Add coconut and mix well again. Shape into
egg form and chill overnight. Dip in chocolate coating.

Chocolate Coating:
In a double boiler, melt chocolate squares and wax. Cool slightly before
dipping eggs.


Easter Bread

Many variations of this recipe are prepared in Europe. This
one is adapted for bread machines.

Makes 1 loaf

1 cup Milk, whole
2 Eggs, lightly beaten
3 Tablespoons Butter, melted
1/2 cup Granulated sugar
1 teaspoon Salt
3 cups Bread flour
1 packet (2 1/4 teaspoon) Dry active yeast

Add all ingredients to a bread machine in the order listed.
Do not use a delayed start program. Use a basic bread
program.

holidays and birthdays is the cupcake.
All you need is food coloring, cake decorator
gel and frosting, and a little imagination.


BUGS BUNNY CARROT CAKE

2 cups sugar
4 whole eggs
3 cups grated carrots
2 tsp. baking soda
1/2 tsp. salt
1 tsp. vanilla
1 cup canola oil
2 cups cake flour
1 tsp. apple bake Seasoning
8 tbsp. margarine
3 cup sugar, confectioner's
8 ounces cream cheese
1 teaspoon lemon extract

Preheat oven to 375 degrees. Beat granulated sugar,
vanilla, eggs, and oil in large mixing bowl until smooth.
Add grated carrots, flour, baking soda, spices, and salt
to sugar mixture. Beat at medium speed for 2 minutes.
Pour into greased & floured 9 x 13 pan. Bake for 45-50
minutes until done. Test with toothpick in center. Remove
cake from pan and cool on rack until completely cool.
Spread frosting over cake and refrigerate until ready to
serve.

Frosting recipe:
Cream margarine and cream cheese. Beat in 3 cups
powdered sugar and lemon/water mixture (1 tsp. Lemon
Extract and Water to make 1 Tbsp.) until light & fluffy.
