Snowflake Pie Crust
If you'll be baking pies for the holidays, try creating a
snowflake pattern for the top crust. Fold the round crust

Now there's really no excuse for throwing out that old fruitcake ‹ even if
it's been sitting around for years.
According to physicist and food scientist Peter Barham, a little physics can
revive a stale and crumbly relic into the moist, weighty item it once was.
"You can stick a fruitcake, or for that matter any cake in a bag, leave it
on the shelf for three to four years, come back to it and make it better
than ever," contends Barham, a physicist at the University of Br
istol in
England and author of the book The Science of Cooking.

Moist Christmas Turkey
An easy way to keep your holiday turkey from drying out is
to add an ovenproof pan of water to your oven during the
roasting process. This will add a little moisture to the
dry oven air. It will never actually steam the bird. Check
the water level every time you baste the turkey.

Save Those Turkey Bones!
Don't let your host throw away the turkey carcass after the
holiday turkey dinner. Save it for soup! Break apart the
carcass and place it in a large stockpot. Add enough water
to cover the bones, then add onion, celery and seasonings
and cook over medium heat for about 1 1/2 hours to make a
rich turkey broth. Strain, then add vegetables and pasta or

and all your stuffing is quickly and easily removed from the

out of the turkey.

Christmas Turkey Tip
The challenge in cooking a large turkey has always been to
have fully cooked dark meat (legs and thighs) without
overcooking (and drying out) the breast. An easy way to
help assure an evenly roasted bird involves one simple
turn. Start the turkey (on a rack) with the breast facing
the bottom of the pan. Cover loosely with foil to avoid
over-browning. About halfway through the estimated cooking
time, turn the turkey to the traditional "breast-up"
position. Leave the foil on until the last 20 minutes of
cooking.

Snowgummies

1/4 C butter
6 C crispy rice cereal
4 C miniature marshmallows

Melt butter in large pan over low heat. 
Add marshmallows and stir until they
have all melted. Add cereal and mix well. 
With a tablespoon, shape one large ball 
for snowman's bottom. Shape two more 
balls. One for the body and the smallest 
for the head. Place them on top of one 
another. If mixture hardens, just warm 
it in the pan on the stove for a minute. 
Wet the flat side of some chocolate chips 
and add onto snowman for buttons and eyes.

 

CHRISTMAS MORNING CASSEROLE

This recipe is great because it can be made 
up ahead of time and cooked while the packages 
are being unwrapped:

1 lb. mild sausage
6 eggs
2 cups milk
1 tsp. salt
1 tsp. dry mustard
2 slices cubed white bread
1 cup shredded cheese

Brown sausage and drain well. Beat eggs. Add milk, salt,
mustard; gently stir in cheese, sausage, and bread. Place in
buttered 9X13 casserole. Refrigerate overnight (at least 6
hours). Place in cold oven set at 350 degrees. Bake 45 minutes.

Serve and enjoy.

 

Cordero a la chilindron (Christmas Spanish Lamb)

2 ¼ LB boned shoulder of lamb, cut into 2 inch cubes
4 oz Spanish serrano ham (or parma ham)
1 red pepper, charred under a hot grill, then peeled 
and cut into narrow strips
4 cloves garlic, chopped
1 onion, finely chopped
lg can tomatoes
3 tbs olive oil
Salt and black pepper

Heat the oil in a large, heavy bottomed saucepan and 
fry the lamb until brown.

Don't overcrowd it, do it in batches if you need to. 
Then remove it and fry the onion and garlic for a 
minute or two.

Now add the pepper and fry that for a minute or so, 
then put the lamb back in, with the tomatoes, and 
cook over a low heat for about 50 mins to an hour. 
Serve with a green salad and some fresh bread.

 

Christmas Eve Punch

2 cups unsweetened pineapple juice
2 cups orange juice
1/2 cup lemon juice
1/4 cup honey
2 Tbsp. maraschino cherry juice
1 qt. vanilla ice cream
28 oz. ginger ale, well chilled

Blend juices and honey and chill until serving time. 
When ready to serve, pour juices over small scoops 
of vanilla ice cream in punch bowl, and stir until ice 
cream is almost dissolved. Carefully add the ginger
ale. Serve immediately. (This "curdles" if left very 
long. It is better to make small batches, rather 
than one large one.)

 

Pineapple Kugel - a kid pleaser!

Serves 8

8 ounce package wide egg noodles
6 large eggs, room temperature
5 tablespoons unsalted butter, melted
1/2 cup granulated sugar
8 ounce can crushed pineapple with juice
1-1/4 teaspoons vanilla
1 teaspoon ground cinnamon
(8 ounce can pineapple rings, drained
maraschino cherries

Boil noodles in boiling salted water just until 
softened; do not cook through.
Rinse, and drain.
Beat eggs with melted butter.
Beat in sugar.
Stir in crushed pineapple with juice, vanilla, 
and cinnamon.
Stir in the cooked noodles.
Pour into a greased 9" x 13" baking pan.
Place pineapple rings over the top in a nice pattern.
Add cherries.
Bake at 350°F for 50 minutes, or until golden.

 

Marshmallow Holiday Popcorn Tree

12 c Popped popcorn 
1/2 c Margarine or butter 
3 c Mini marshmallows 
1/2 pk Lime flavored jello 
Green food color Candy pieces to decorate

Spread popcorn evenly in jelly-roll pan or on waxed paper-lined 
counter. In medium saucepan combine margarine and marshmallows; cook 
over medium heat until melted. Add jello; continue to cook until 
jello is dissolved. Add food color and mix well. Pour evenly over 
popcorn; stir quickly to coat. With dampened hands shape popcorn into 
cone shape. Decorate tree with candy pieces.

 

Holiday Popcorn Balls

1 pk Microwave popcorn 
1/2 c M&M's -OR- small gumdrops 
1/3 c Unsalted peanuts 
2 c Mini marshmallows 
3 tb Butter or margarine 

Microwave popcorn according to package directions. Grease an 8" 
square pan. Remove unpopped kernals from popcorn. In large greased 
bowl combine popcorn with candy and peanuts. Place marshmallows and 
margarine in micro-safe container. Microwave on HIGH for 1-1/2 to 2 
minutes or until melted and smooth stirring once halfway through 
cooking. Pour marshmallow mixture over popcorn mixture; toss until 
evenly coated. With buttered hands press mixture into prepared pan. 
Refrigerate until firm. Cut into bars. 



CINNAMON HEARTS CHRISTMAS PEARS

24 large ripe pears
2 tablespoons lemon juice
4-2/3 cups cinnamon red-heart candies (14 oz)
2-1/2 quarts water for syrup plus water to cover pears
2 tablespoons Fruit Fresh (citric acid)
4 drops red food coloring
4 cups granulated sugar

Peel, core and halve pears. Combine pears with lemon juice, Fruit Fresh 
and enough water to cover. Submerge the pears in the liquid to prevent 
discoloration.

Boil the cinnamon candies in water and stir until completely dissolved. 
Add sugar and food coloring and heat until sugar is completely 
dissolved. Stir often. Drain the pears and add to pot. Cook for about 
8 to 10 minutes until pears are softened but not mushy. Ladle the fruit 
into wide mouth pint jars (four pear halves into each of six jars). 
Ladle in syrup to cover leaving one-half inch head space. Seal and cap. 
Process in a water bath canner for 20 minutes. Yield: 6 pint jars.

CRÈME DE MENTHE CHRISTMAS PEARS

24 large ripe pears
2 tablespoons lemon juice
2 cups crème de menthe
2-1/2 quarts water for syrup plus water to cover pears
2 tablespoons Fruit Fresh (citric acid)
4 drops green food coloring
4 cups granulated sugar

Peel, core and halve pears. Combine pears with lemon juice, Fruit Fresh 
and enough water to cover. Submerge the pears in the liquid to prevent 
discoloration.

In a stock pot, add water, sugar and food coloring and heat until sugar 
is completely dissolved. Stir often. Drain the pears and add to pot. 
Cook for about 8 to 10 minutes until pears are softened but not mushy. 
Add Crème de Menth. Ladle the fruit into wide mouth pint jars (four 
pear halves into each of six jars). Ladle in syrup to cover leaving 
one-half inch head space. Seal and cap. Process in a water bath canner 
for 20 minutes. Yield: 6 pint jars.

Extra Crème de Menthe syrup may be canned by adding 1/2 cup sugar to 
each pint of syrup and bringing to a boil. Process as above and use as 
an adult only ice cream or cake topping. 

 

Chest Noels

3/4 cup butter
1-1/2 cups flour
3 tablespoons white sugar
2-1/2 cups brown sugar
3 eggs, separated
1 cup chopped pecans
1/2 teaspoon vanilla
1 cup powdered sugar

Cream butter and add flour and white sugar, mix well. Press 
evenly in a 9x13-inch pan. Bake for 15 minutes at 350 degrees. 
Mix brown sugar, egg yolks, pecans and vanilla. Fold in stiffly 
beaten egg whites. Spread evenly over baked layer. Bake 25 minutes. 
Dust with powdered sugar and cool. Cut into small squares and roll 
in powdered sugar.

Spiced Tea - A Warm Holiday Treat

Some of my fondest holiday memories are of the smells that
fill the air this time of year; pine needles, good food
cooking and yummy spices. Spiced tea not only warms you up
on cold days, it also fills the house with the aroma of
cinnamon and clove. You can buy "mulling spices" in the
grocery, which give you a ready-to-use mix, or you can
create your own blend. If you tie the spices up in a piece
of cheesecloth and brew them with the tea, they will be
easy to remove before pouring the tea into cups. Add some
orange juice and a bit of your favorite sweetener and
enjoy!

 

HOLIDAY MARTINI RECIPES

NON-ALCOHOLIC HOLIDAY BEVERAGES

 

Santa's Whiskers

1 cup butter, softened 
3/4 cup chopped red and green candied cherries
2 Tblsp. milk 
1 cup of sugar 
1/2 cup chopped pecans
1 tsp.. vanilla 
3/4 cup flaked coconut
2 1/2 cups all-purpose flour 

Cream butter, gradually add sugar, beating until light and fluffy. Add 
milk and vanilla, beating until smooth. Stir in remaining ingredients 
except coconut. Shape dough into 2 (8x2") > cylinders. Roll each in 
coconut. Cover and chill 3 to 4 hours or overnight. Cut into 1/4" thick 
slices. Place on ungreased cookie sheets: Bake at 375 degrees F for 12 
to 14 minutes. Cool on wire racks: Yield, about 4 1/2 dozen

CHRISTMAS WREATH COOKIES

1 (10 1/2 oz) bag miniature marshmallows
6 cups corn flakes
1/4 cup melted margarine
Green food coloring
Waxed paper
Red hot decorative candies

Melt margarine in 4 quart pot; add marshmallows, melt over medium-high heat
stirring constantly. Add green food coloring, mixing well, until desired
color. Then add corn flakes, stirring until coated.

Cool mixture for 5 minutes. Drop spoonfuls on waxed paper. Using buttered
hands, shape into wreaths. Place cinnamon red hots on wreaths for "balls."

Remove and place wreaths on waxed paper (between each layer) and store in
airtight tin in refrigerator or cool room. Yield: 36.

CHRISTMAS GOOSE WITH RAISIN STUFFING

1 large yellow onion; chopped
1 large tart apple; chopped
1/4 plus 1/3 separate cup chicken broth
6 cups toasted fresh bread crumbs
1/2 cup chopped raisins
1/4 cup slivered almonds; toasted
1/4 cup minced parsley
1 teaspoon dried sage leaves
1/4 teaspoon each salt and black pepper
1 goose (7 to 8 pounds), giblets removed

In a small saucepan, combine the onion, apple, and 1/4 cup
broth. Bring to a boil. Lower heat and simmer for 5 minutes
or until onion and apple are tender. In a large mixing bowl,
combine onion mixture, bread crumbs, currants, almonds, parsley,
sage, salt, and pepper. Toss 1/3 cup broth with bread crumb
mixture. Preheat the oven to 350 degrees. Rinse goose; drain,
and pat dry. Prick the skin on the lower breast, legs, and
around the wings with a skewer. Stuff goose. Then, place goose,
breast-side-up, on a rack in large roasting pan. Insert a
roasting thermometer in its thigh without touching bone. Spoon
remaining stuffing into a lightly greased 1 1/2- quart casserole;
cover and refrigerate. Roast goose for 2 to 2 1/2 hours or until
the thermometer registers 175 degrees, drain fat often. Bake the
covered casserole of stuffing along side the goose during the
last 30 minutes of roasting. Let the goose stand for 15 to 20
minutes. Carve the goose and discard the skin. 

Yield: 6 Servings 

GINGERBREAD COOKIES WITH CHOCOLATE

1/2 cup butter or margarine
1/2 cup molasses
2 (1 ounce) squares unsweetened chocolate
2 1/2 cups all-purpose flour
2/3 cup white sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon ground ginger
1/4 teaspoon salt
1/4 cup milk
white sugar

Combine butter or margarine, molasses, and unsweetened chocolate
in the top of a double boiler. Heat until chocolate melts. Stir
until smooth. Sift together flour, 2/3 cup sugar, baking powder,
baking soda, ginger, and salt. Stir in melted chocolate mixture
and milk. Mix well. Chill until firm. Roll dough into 1 inch balls.
Roll balls in sugar. Place on an ungreased cookie sheet. Bake at
375 degrees for about 10 minutes.

Yield: 3 Dozen Cookies

Egg Nog

3 c Fat Free Half & Half
1 c Egg Substitute
1 T Real Vanilla
1/2 c brandy or to taste
1/2 c Myers' Rum or to taste
1/2 c Amaretto or to taste
4 pkt sugar substitute or to taste

Blend well.
Place a scoop of Fat Free Ice cream in each cup.
Sprinkle w nutmeg, pour in 'nog'.

Christmas Beef Bourguignonne (sung to the Christmas Carol)

12 stems of parsley 
11 black peppercorns 
10 onions, quartered 
9 carrots, chunky 
8 cups of red wine 
7 cups of beef stock 
6 cloves of garlic 
5 t s rosemary & thyme 
4 alspice berries (&/or whole cloves…not part of song)
3 bay leaves
2 ounce brandy
and an eye of round, about 6 lbs 

De-fat meat, cut in chunks, marinate overnight. Drain, strain

2 strips bacon, chopped, fry crisp, remove
1 lb little mushrooms, brown, remove
pearl onions, carmelize, remove

Dust chunks of meat w flour, brown and remove add
2 T tomato paste, cook to brown
Add back in the carrots, onions marinade and boil
Cook 4 hr 275 deg oven Strain, thicken juices

Add everything back in, serve w mashed potatoes
The only fat is in the meat and bacon. So fat content 
depends on the size of your Christmas serving 
(and we all know we eat a little extra at Christmas)

* you can use chuck, instead of round, but 
the fat content soars!

Red's Christmas Bars

The ultimate in Christmas treats will keep your little helpers
busy all day--as co-chefs in the kitchen and head-tasters at the
table! 

* 1/4 cup butter
* 1 cup finely chopped walnuts
* 1/2 cup graham cracker crumbs
* 2 cups chopped TWIX(r) Miniatures
* 1 cup "M&M's"(r) Milk Chocolate Candies for the Holidays
* 1 can (14-ounce) sweetened condensed milk
* 1 1/3 cup coconut flakes 
* Aluminum foil
* 13x9 inch baking pan

1. Preheat the oven to 350 degrees F. 
2. Completely line the bottom and sides of a baking pan with
aluminum foil. Put the butter into the baking pan and melt 
it in the oven. Once butter is melted, remove pan from oven 
and coat the entire bottom with melted butter.
3. Mix together the walnuts, graham cracker crumbs and chopped
TWIX(r) Miniatures. Then stir in half the "M&M's"(r) Milk
Chocolate Candies for the Holidays.
4. Spread the mixture evenly into the bottom of the baking pan. 
5. Pour the condensed milk over the mixture, sprinkle with the 
coconut and then top with the remaining "M&M's"(r) Milk 
Chocolate Candies for the Holidays. Press the mixture firmly 
into the pan. 
6. Bake for 25 minutes, or until golden brown. 
7. Chill for one hour before cutting into bars. 

Makes about 36 bars.

* Plastic wrap
* Clear tape
* Green construction paper
* Green string
* Green marker

1. Wrap two cups of red and green "M&M's"(r) Chocolate Candies
for the Holidays in plastic wrap. 
2. Twist the top of the plastic wrap to make the stem of the 
apple. 
3. Tape the stem completely and color with a green marker. 
4. Tie on a paper leaf made of green construction paper to the 
stem with green string. 

Makes a great teacher gift, present topper or party favor. 

 

Roasted Chestnuts - enjoy a fall tradition

1. When selecting chestnuts, pick the ones that are full,
dark and shiny. Avoid ones that are dull on the outside
and shriveled inside. Following this direction will help
reduce the likelihood of your having mold on your
chestnuts.

2. Slit chestnuts with one long slit from top to bottom,
using a strong, straight edge knife.

3. Set oven to "broil" and pre-heat it to 425 F. Broiling,
rather than baking, gives them more of a fire-roasted
flavour.

4. Place the chestnuts on a metal baking pan and put it
into the oven for about 20 minutes, gently stirring or
shaking them up midway so that they roast more
evenly.

Notes: Your goal should be to bring the chestnuts to
the point where the inside is completely soft, but the
surface of the nutmeat is slightly browned to a golden
brown and has a bit of crispness.

Eating the chestnuts: Serve with the shell attached and
let people peel it and the fuzzy skin off themselves by
sticking their fingers into the slit and pulling away the
shell from the nutmeat. If any parts appear very black,
that probably was mold and is now charred and not
dangerous. Just cut or tear away the black part and
enjoy the good parts.

Easy removal of roasted chestnut skins:
Martha Stewart talked about this recently on her
show. When the chestnuts are still warm, put them in
an old, clean dish towel and rub them. The skins came
right off when she did it! Hope this helps.


Holly Wreaths


1 1/2 sticks butter or margarine
1 16 oz. bag miniature marshmallows
green food coloring
1 box frosted corn flakes
cinnamon red hots

Melt 1 1/2 sticks of butter or margarine over medium-low heat, then 
dump in a 16 oz. bag of miniature marshmallows, stir constantly until 
all the marshmallows have melted, then add green food coloring until 
you get the desired color. Remove from heat and stir in one box of 
frosted corn flakes. Next you have to work very fast. Spray some 
cooking spray on your hands and mold the mixture into wreaths onto 
parchment paper. Decorate with red hots. 


CHRISTMAS SPRITZ COOKIES

1-1/2 cups butter
1 cup granulated sugar
1 egg
2 tablespoons milk
1 teaspoon pure vanilla extract
1/2 teaspoon almond extract **
4 cups all-purpose flour
1 teaspoon baking powder
Assorted colored sprinkles or sugar

Preheat oven to 400 degrees F. Beat together butter and sugar. Add 
egg, milk, vanilla and almond extracts. Beat well. In a separate bowl 
sift together flour and baking powder. Gradually add to creamed 
mixture, mixing to make a smooth dough. Put dough into a cookie press 
and press cookies on an ungreased cookie sheet. Decorate with sprinkles 
or colored sugar. Bake 6 to 8 minutes. Remove cookies immediately and 
cool on a rack. Yield: 6 dozen cookies

Variation: Add 2 squares unsweetened melted baking chocolate to dough. 
** use orange, lemon, strawberry or mint flavoring and a few drops of 
food coloring to dough instead of almond extract. 


CHRISTMAS THUMBPRINTS 

1-1/2 cups Butter 
1-1/2 cups Light brown sugar 
2 Eggs 
3-1/2 cup All-Purpose Flour 
2 teaspoons Baking soda 
1 teaspoon Salt 
1 teaspoon Pure Vanilla Extract
1-1/2 cups shredded or flaked Coconut 
4 teaspoons Cream of tartar 
Any flavor jam or jelly 

Cream butter and sugar together. Add eggs and mix well. Sift dry 
ingredients together and add vanilla, and drop by teaspoonfuls onto 
ungreased cookie sheet. With your finger or a spoon, make an 
indentation in the center of the cookie ball and fill with jam or jelly. 
Sprinkle coconut over all and bake at 375 degrees F for 10-12 minutes. 
Yield: 4 dozen cookies.


CHRISTMAS SNOWBALLS

1 cup unsalted Butter
1/2 cup Powdered Sugar
1 teaspoon Pure Vanilla Extract
2-1/2 cups All-Purpose Flour
3/4 cup finely chopped nuts
Extra powdered sugar for rolling

Preheat oven to 400 degrees F. Beat butter, powdered sugar and vanilla. 
Stir in 1 cup of flour. Using your hands, mix in another cup of flour 
and half the nuts. Still using your hands, mix in the rest of the flour 
and nuts. Keep mixing and squishing the dough with your hands until it 
holds together well. Roll into 1inch balls and place on an ungreased 
cookie sheet. Bake 10 to 12 minutes. Roll cookies in extra powdered 
sugar while hot, then again when cooled. Makes about 38 snowballs.

HOLIDAY SLAW

1/2 cup chopped fresh parsley
1 10 oz. bag sliced red cabbage
1 10 oz. shredded carrots (4 cups)
1 pkg. dried cranberries (3/4 cup)

1/4 cup cider vinegar
2 tsp. olive oil
1/2 tsp. salt
1/8 tsp. freshly ground pepper
1 1/2 T. honey mustard
1 garlic clove, minced

Combine first 4 ingredients in large bowl.
Combine remainder ingredients in small bowl.
Stir well with whisk. Pour mixture over slaw, toss well.

Yields 12 servings Serving 3/4 cup

Rum Cake

1 cup pecans or walnuts -- chopped
1 package yellow cake mix
1 4-Serving package instant vanilla pudding mix
4 eggs
1/2 cup cold water (or substitute Bacardi for water)
1/2 cup vegetable oil
1/2 cup Bacardi Dark Rum (80 Proof)

Glaze:

1/2 cup butter
1/4 cup water (or substitute Bacardi for water)
1 cup granulated sugar
1/2 cup Bacardi Dark Rum

Preheat oven to 325 degrees F. Grease and flour a 10"
tube pan or 12-cup Bundt pan. Sprinkle the nuts over
the bottom of the pan. Mix all cake ingredients
together and beat until fluffy.

Pour batter over the nuts and bake for 1 hour. Cool.

Invert cake onto serving dish. Prick top with a
fork in several places.

For glaze, melt butter in a saucepan. Stir in water
and sugar and boil for 5 minutes, stirring constantly.
Remove from heat and stir in rum. Drizzle and
smooth some of the glaze evenly over cake top and
sides. Allow cake to absorb glaze. Repeat this until
all the glaze has been used.

Note: option * Also, melt 2 cups of semi-sweet 
morsels with 1/2 stick butter, pour this over 
entire cake. 

Bourbon Balls

Substitute the bourbon for rum and call these Rom Balls.

3 cups finely crushed vanilla wafers (about 75)
2 cups powdered sugar
1 cup finely chopped pecans or walnuts (about 4 ounces)
1/4 cup cocoa
1/2 cup bourbon
1/4 cup light corn syrup
Powdered or granulated sugar

Mix crushed wafers, powdered sugar, pecans,cocoa. 
Stir in bourbon, corn syrup. Shape into 1" balls. 
Roll in powdered sugar. Refrigerate in tightly covered
container several days before serving.

Christmas Toffee

1 cup margarine
1 cup chopped walnuts or pecans
1 cup sugar
3 plain chocolate bars, broken
Spread nuts on a greased 13x11 cookie sheet. In
saucepan combine margarine and sugar, melt and
bring to a boil. Stirring constantly boil until mixture
turns a golden brown, about 10-12 minutes. Watch
carefully! Pour toffee mixture over nuts. Place
chocolate pieces over hot toffee and spread with a
knife. Place in cool place. When hard, break into
pieces. Note: You can use chocolate chips in place
of bars.

Root Beer Christmas Cake

Every year it's the same old thing: 
fruitcakes and sugar cookies.
Ho-hum! Holiday baking tops the list of 
things to do this Christmas but the results 
are often uninspired. Why not change the 
flavor this year and try something different? 
Here's a delicious recipe that everyone will 
rave about. It's easy, too! 

2 cups flour
2 cups sugar
1 cup root beer
2 sticks of margarine
1/2 cup milk
1 teaspoon baking soda
1 teaspoon vanilla
1/2 teaspoon salt
2 eggs
1 1/2 cups miniature marshmallows (optional)

Mix flour and sugar. In a saucepan, 
combine 1 cup root beer and two sticks of 
margarine, bring to a boil and add to the 
flour/sugar mixture. Stir well. Add in 1/2 cup 
milk, 1 teaspoon baking soda, 1 teaspoon
vanilla, 1/2 teaspoon salt, and two eggs. 
Blend well. If desired, stir in 1 1/2 cups of 
miniature marshmallows. Bake in a 9x12 pan 
at 325F for 30 minutes.

Top your masterpiece off with root beer 
flavored frosting:

1/4 cup butter or margarine
1/8 teaspoon of salt
2 cups confectioner's sugar
4 tablespoons cream or milk
1 teaspoon root beer extract 
(or 1 tablespoon of root beer from the can)

Work the butter and salt with a spoon or 
electric beater until fluffy and creamy. 
Add in confectioner's sugar and cream 
(or milk), continuing to stir or beat. Add 
only enough cream or milk to achieve 
spreading consistency. Add vanilla and 
spread over cake


HOLIDAY CHEESE BALL

3 tablespoon finely chopped pecans
1 package (8 ounces) Neufchatel cream cheese (room temperature)
3 green onions (finely chopped with tops, 1/3 cup)
1 teaspoon Dijon mustard
1/4 teaspoon hot red pepper sauce
1/4 teaspoon minced garlic
1 cup shredded sharp cheddar cheese (4 ounces)
1/4 cup minced parsley

Preheat the oven to 350 degrees and spread out the pecans in
a small pan. Bake, tossing once, for 8 minutes or until
toasted. Meanwhile, in a small bowl, place the cream cheese,
onions, mustard, red pepper sauce, and garlic. With an
electric mixer at moderate speed, beat for 3 minutes or until
well blended. Stir in the cheddar cheese. Wrap the mixture in
plastic wrap, shape into a 4-inch ball, and chill for 15
minutes. On wax paper, toss the toasted pecans with the
parsley. Unwrap the cheese ball and carefully roll it in the
parsley mixture, coating it completely. Rewrap in plastic wrap
and refrigerate until time to serve. Place the ball on a
serving platter and surround with an assortment of crackers.

Yield: 24 Servings

Christmas Morning Breakfast Strata 

1 lb. bulk pork sausage 
8 eggs 
10 cups cubed bread 
3 cups milk 
2 cups shredded cheddar cheese (8 oz.) 
2 cups sliced fresh mushrooms (8 oz.) 
1 10 oz. pkg. of frozen broccoli, thawed and drained 
2 Tbsp. margarine, melted 
2 Tbsp. flour 
1 Tbsp. dry mustard 
2 tsp. basil 
1 tsp. salt 

Christmas Eve: Brown sausage; drain. In large bowl, beat eggs. Add all 
remaining ingredients; mix well. Spoon into greased 13 x 9 inch baking 
pan. Cover and refrigerate overnight. 

Christmas Morning: Preheat oven to 350 degrees. Bake (uncovered) 60-70 
minutes or until knife inserted near center comes out clean. Refrigerate 
leftovers 

Makes 10-12 servings. 


Plum Pudding

1 lb. flour
2 lb. stale bread, grated
1 qt. dark molasses
1 pt. brown sugar
2 tbs. nutmeg
1 tbs. allspice
1 tbs. ground cloves
2 lb. citron
2 lb. currants
2 lb. raisins, seeded and chopped
1 tbs. salt
1 1/2 tbs. yeast, powdered
2 lb. beef kidney suet

Sauce: 1 pint sugar
2 tbs. butter
3/4 c. brandy

Alert readers will note that this recipe is from slightly post- 1865, by 
the mention of "powdered yeast", which was not marketed until after the 
Civil War. Even not-so-alert readers will note that this thing is huge! 
You have our permission to cut it down, at least by half. That would 
still make about 8 pounds of pudding, which ought to take care of 
everybody on your Christmas list at least.

Brown one pound of flour in the stove and sift it three times; add two 
pounds of stale light bread grated. After cutting the crust (which is 
not to be used), add one quart of dark molasses to one pint of brown 
sugar, two grated nutmegs, one tablespoonful of allspice, one 
tablespoonful of ground cloves, two pounds of citron sliced one-half 
inch thick; two pounds of chopped and seeded raisins, one tablespoonful 
of salt, one and one -half tablespoonfuls of yeast powder, two pounds of 
beef kidney suet, chopped fine, and taking all strings out of suet. Add 
all together and stir until thoroughly mixed. Have a bag made in the 
shape of a sugar-loaf [i.e., a cone] and wet it in cold water, 
sprinkling on the inside thickly with flour. Put the pudding in the bag 
and let it boil for seven hours, tie the bag securely.

Sauce:
One pint of white sugar to two tablespoonfuls of butter and one claret 
glass of good brandy, and put to boil till thick as honey, and serve 
with pudding, hot. 

Chocolate Fruit Cake

Makes 1 (9-inch) ring

3/4 cup packed light brown sugar
1/2 cup (1 stick) butter, softened
4 (1-ounce) squares unsweetened chocolate, melted
2 large eggs
1/3 cup milk
2 cups unsifted all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1 cup golden raisins
1 cup coarsely chopped macadamia nuts
1/2 cup coarsely chopped crystallized ginger
1/4 cup bourbon

1) Preheat oven to 325 degrees F. Lightly grease a (9-inch) tube pan.
2) Beat together brown sugar, butter, chocolate, eggs and milk in large bowl
with electric mixer large bowl until fluffy. Add flour, baking powder and
salt; beat until combined. Fold in raisins, macadamia nuts and crystallized
ginger. Transfer mixture to greased tube pan.
3) Bake 1 hour or until golden brown and surface springs back when gently
pressed. Cool to room temperature on wire rack. Wrap in cheesecloth soaked
in bourbon; rewrap tightly and refrigerate at least 1 week before cutting.


Egg Nog

3 c Fat Free Half & Half
1 c Egg Substitute

1/2 c brandy or to taste
1/2 c Myers' Rum or to taste
1/2 c Amaretto or to taste
4 pkt sugar substitute or to taste

Blend well.

Popcorn-Marshmallow Christmas Tree

12 c Popped popcorn 
1/2 c Margarine or butter 
3 c Mini marshmallows 
1/2 pk Lime flavored jello 
Green food color 
Candy pieces to decorate christmas tree 

Spread popcorn evenly in jelly-roll pan or on waxed paper-lined 
counter. In medium saucepan, combine margarine and marshmallows; cook 
over medium heat until melted. 
Add jello; continue to cook until jello is dissolved. Add food color 
and mix well. Pour evenly over popcorn; stir quickly to coat. 
With dampened hands, shape popcorn into cone shape. Decorate 
christmas tree with candy pieces.

Sugar Cone Trees

Place a sugar cone upside down on a paper plate and cover it with 
dark green frosting. Add assorted small candies such as red hots, 
miniature MM’s, skittles, chocolate chips, etc. 
Add different colored sprinkles. 
Sprinkle on confectioners sugar so it looks like your christmas tree 
is covered in snow.

Wreath Cookies

1/2 cup butter
3 cups miniature marshmallows
1/2 tsp almond extract
1/2 tsp vanilla extract
1 tsp green food color
4 cups corn flakes

Melt butter, add marshmallows. When mixture is smooth, add extracts, 
coloring and cereal. Make into wreath shapes, decorate with red 
cinnamon candies and silver balls. 

REINDEER PUNCH

2 cups orange juice
2 cups lemon juice
2 cups grenadine syrup
3 quarts ginger ale
1 pint of quartered strawberries or sliced fruit in season.

Mix all ingredients. Pour over block of ice to chill.
Just before serving, add the ginger ale and fruit.


Christmas Wassail

4 cups apple cider
4 Cinnamon sticks
1 lemon sliced
1 tsp. whole allspice
1 tsp. whole cloves
4 cups pineapple/orange juice
1/2 cup sugar
4 cups dry red wine

Place apple cider, cinnamon sticks, lemon slices, allspice and cloves
in a large saucepan and heat over medium high heat for 20 minutes. Add
pineapple/orange juice, sugar and red wine and heat thoroughly. Remove
lemon slices, cinnamon sticks, cloves and allspice before serving.
Serve warm.

The Skinny: Use reduced sugar juice, non-alcoholic wine and your
favorite sugar substitute.

Eggnog Extreme

Makes 20 servings

" An extremely rich egg nog. Not for anyone watching cholesterol! This
recipe contains raw eggs. We recommend that pregnant women, young children, the elderly and the infirm do not consume raw eggs.

12 egg yolks
2 cups white sugar
1 (750 milliliter) bottle white rum
1 quart half-and-half cream
1 quart heavy cream
12 egg whites
1 cup white sugar
1/4 teaspoon ground nutmeg

1 In a large bowl, combine egg yolks, 2 cups sugar and rum. Mix well, cover
and refrigerate for 24 hours.
2 Stir half-and-half into cooled yolk mixture. In a large bowl, whip the
heavy cream until soft peaks form; set aside.
3 In a separate clean bowl, with a clean whisk, whip egg whites until thick,
then gradually add sugar and whip until peaks form. Fold the whipped cream
into the egg whites, then fold into the yolks mixture. Sprinkle top with
nutmeg.

Makes 20 servings

MINI CHRISTMAS PUDDINGS

200g (7 oz) plain or dark chocolate
50g (2 oz) butter
2 tablespoons golden (corn) syrup
225g (8 oz) digestive biscuits ( cookies)
50g (2 oz) dried apricots, finely chopped
50g (2 oz) golden sultanas
50g (2 oz) raisins
50g (2 oz) glace cherries, chopped
icing sugar for dusting
75g (3 oz)ready to roll white icing
1 tablespoons apricot jam
50g (2 oz) green ready to roll icing
edible sugar coated red balls or
25g (1 oz) ready to roll red icing

Melt chocolate together with butter and golden syrup in a saucepan
over a low heat, stirring occasionally for about 4 minutes.
Put biscuits into a plastic bag, crush into very small pieces with a
rolling pin. Mix into melted chocolate mixture with dried fruit and
glace cherries. Set aside to cool in the fridge for about 30 minutes.
Using hands, roll tablespoons of mixture into about 20 small balls.
Dust a clean work surface lightly with icing sugar, roll out white
icing till quite thin. Cut small circular/ wavy shapes. Brush tops of
puddings with a little warmed apricot jam, stick circles on.
Roll out green icing thinly, cut holly leaves, attach red balls and
leaves with a little apricot jam.
I didn't have ready to roll icing when I did these, I improvised with
glace icing and gold and silver balls. The ingredients and weights are
British, as far as I am aware, hope they translate OK.


Best Way To Enjoy Gingerbread

If you've never had gingerbread with lemon sauce, a pure
pleasure awaits you. Never has there been a combination of
two flavors that so perfectly compliment each other and
produce such a wondrously delicious taste sensation. You
can use gingerbread from a box mix (follow instructions on
package) or make it from scratch from your favorite
cookbook. That's not the critical part. The sauce makes
this dessert. Spoon it over warm gingerbread. Here's the
recipe:

Old-Fashioned Lemon Sauce For Gingerbread

1 c sugar
1/2 c butter
1/4 c water
1 egg, well-beaten
1 teaspoon grated lemon peel (or grated peel from 1 lemon)
3 tablespoons lemon juice

Heat ingredients to boiling, stirring constantly. Makes 1
1/3 cups.


CHRISTMAS SALSA

2 (15 oz) cans black beans -- drained and rinsed
1 (11 oz) can niblet corn -- drained
1 cup prepared chunk-style salsa
1 medium red bell pepper -- diced
3 scallions -- sliced
1/2 cup cilantro -- chopped
1 tablespoon lime juice
1 teaspoon cumin
1/2 teaspoon garlic powder
Salt and pepper -- to taste

Combine all the ingredients in a bowl. Serve immediately or refrigerate in
airtight container for up to 3 days. Yield: 6 cups (about 24 servings).


Cranberry Raspberry Punch 

3 cups cranberry, raspberry drink, chilled
3/4 cup sugar
3/4 cup ReaLemon Lemon Juice from Concentrate
1 pint (2 cups) vanilla ice cream
2 cups sparkling water

Combine cranberry raspberry drink, sugar and ReaLemon in pitcher. Stir
until sugar dissolves.
Pour evenly into 12 - 6 ounce punch cups or glasses; add an ice cream scoop
to each cup or glass. Slowly add sparkling water.

Makes 12 servings.


EGGNOG QUICK BREAD

This eggnog bread would be good sprinkled with confectioners' sugar and 
served with Christmas breakfast. Makes 1 - 9 x 5 inch loaf (12 
servings). 

2 eggs, beaten
1 cup eggnog
2 teaspoons rum flavored extract
1 cup white sugar
1 teaspoon vanilla extract
1/2 cup butter, softened
2-1/4 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon ground nutmeg

Preheat oven to 350 degrees F (175 degrees C). Grease bottom only of a 
9x5 inch loaf pan, or three 3x5 inch loaf pans. Blend together the 
eggs, eggnog, rum extract, sugar, vanilla and butter. Sift together the 
flour, baking powder, salt and nutmeg. Add to eggnog mixture and stir 
just enough to moisten; pour into prepared pan. Bake bread in large pan 
for 40 to 60 minutes, or until a tester inserted in the center comes out 
clean. Breads baked in the smaller pans require 35 to 40 minutes. Cool 
for 10 minutes, and remove from pan. Cool completely, wrap tightly and 
store in refrigerator.

Merry Cherry Holiday Dessert

Prep Time: 20 mins
Total Time: 4 hr 5 mins
Serves: 16

1-1/2 cups boiling water
1 pkg. (8-serving size) JELL-O Brand Cherry Flavor Gelatin
1-1/2 cups cold water
1 can (21 oz.) cherry pie filling
4 cups angel food cake cubes
3 cups cold milk
2 pkg. (4-serving size) JELL-O Vanilla Flavor Instant Pudding & Pie Filling
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed, divided

Stir boiling water into gelatin in large bowl at least 2 minutes until
completely dissolved. Stir in cold water and cherry pie filling. Refrigerate
about 1 hour or until slightly thickened (consistency of unbeaten egg
whites). Place cake cubes in 3-quart serving bowl. Spoon gelatin mixture
over cake. Refrigerate 45 minutes or until set but not firm (should stick to
finger when touched and should mound).

Pour milk into large bowl. Add pudding mixes. Beat with wire whisk 2 minutes
or until well blended. Gently stir in 2 cups of the whipped topping. Spoon
over gelatin mixture in bowl.

Refrigerate 2 hours or until set. Top with remaining whipped topping. Store
leftover dessert in refrigerator.

Great Substitute: Substitute 2 pkg. (4-serving size each) JELL-O Brand
Cherry Flavor Gelatin for 1 pkg. (8-serving size) gelatin.

Juicy Holiday JIGGLERS®

Prep Time: 10 mins
Total Time: 3 hr 10 mins
Serves: Makes 24 pieces

2-1/2 cups boiling juice (Do not add cold water)
2 pkg. (8-serving size each) JELL-O Brand Gelatin, any flavor

Stir boiling juice into gelatin in large bowl at least 3 minutes until
completely dissolved. Pour into 13x9-inch pan.

Refrigerate at least 3 hours or until firm (gelatin does not stick to finger
when touched).

Dip bottom of pan in warm water about 15 seconds. Cut into decorative shapes
with holiday cookie cutters all the way through gelatin or cut into 1-inch
squares. Lift from pan. Do not swallow JIGGLERS® whole.

Great Substitute: Substitute 4 pkg. (4-serving size each) JELL-O Brand
Gelatin, any flavor, for 2 pkg. (8-serving size each) gelatin.


Frozen Holiday Custard

1/2 cup raisins
1/4 cup brandy or orange juice
2 (3.4-oz.) packages vanilla instant pudding
3 1/2 cups milk
3/4 cup chopped candied fruit
2 cups frozen whipped topping, thawed

Garnishes: whipped topping, maraschino cherries

Combine raisins and brandy in a small bowl, let stand
1 hour.

Prepare pudding according to package directions using
3 1/2 cups milk. Stir in raisin mixture and candied
fruit. Fold in 2 cups whipped topping. Pour into an
8-inch square pan.

Freeze 4 to 6 hours or until firm. Let stand at room
temperature for 10 minutes. Cut into squares. 
Garnish.

Makes 9 servings.

Fruit Cake Cookies 

1 1/2 cups golden raisins
1/4 cup diced citron
1/2 pound chopped candied cherries
1/4 cup rum
1/2 cup (1 stick) sweet (unsalted) butter, softened
1/2 cup firmly packed dark brown sugar
2 eggs
1 1/2 cups unsifted all-purpose flour
1/2 teaspoon baking soda
2 teaspoons ground cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon ground nutmeg
1/8 teaspoon salt
1/2 pound pecans, chopped
10X (confectioner's) sugar 

Put raisins, citron and cherries in a bowl. Pour on the rum and let 
stand for 1 hour. Cream the butter. Add sugar and eggs and beat until 
fluffy. Sift flour with baking soda, spices, and salt. Add to the 
butter mixture and blend well. Add nuts and the rum soaked fruit. 
Cover and refrigerate overnight. 

Preheat oven to slow (325 F). Grease cookie sheet. Form batter into 
balls the size of walnuts. Bake on cookie sheet for 10-12 minutes. 
Cool on wire racks. Sprinkle with 10X sugar. Makes about 7-8 dozen. 


Satin Sugar Cookie Wreaths

1 c. sugar
1 c. margarine or butter, softened
3-oz. pkg. cream cheese, softened
1/2 t. salt
1 t. vanilla extract
1 egg yolk
2 c. all-purpose unbleached flour
1 can ready to spread vanilla frosting
3/4-inch white satin or decorative ribbon

In large bowl, combine sugar, butter, cream cheese,
salt, vanilla and egg yolk. Blend well. Lightly
spoon flour into measuring cup; level off. Stir in
flour until well blended. Refrigerate about 2 hours
for easier handling.

Heat oven to 375 degrees. On well floured surface,
roll out dough, 1/3 at a time to about 1/4-inch
thickness. Cut with 3 to 4-inch heart-shaped cookie
cutter. Cut enter from hearts with 1-inch heart
shaped canape cutter. Place 1 inch apart on ungreased
cookie sheet. Bake for 7 to 10 minutes or until light
golden brown. 

Remove from cookie sheet; cool. Decorate as desired
with frosting. Allow to dry for several hours or
overnight. Thread ribbon through cookie centers to
form wreath. Place on decorative plate or tray. 3
dozen cookies or two 14 to 18-cookie wreaths.


SCOTCH SHORTBREAD

1 cup butter
1/2 cup brown sugar
1 egg yolk
1 teaspoon vanilla
2 cups sifted flour
1 teaspoon baking soda

Cream butter, add sugar and blend thoroughly. Add egg
yolk and vanilla. Sift flour with baking soda and mix
well with first mixture. Spread in ungreased pan and
prick deeply with a fork. Bake in moderate oven
(350F) for 25 minutes, or until golden brown.

The shortbread may be rolled and cut into desired
shapes or placed in a large pan.


CRISP SHORTBREAD

1-1/2 cups butter
1 cup powdered sugar
3-1/2 cups sifted flour
4 tablspoons rice flour

Cream butter, add sugar and blend thoroughly. Sift
flour with rice flour, and add one cup at a time to
first mixture, kneading well after each addition. Pat
into desired shapes, place in ungreased pan, prick
with fork and bake in moderate oven (350F) for 20 minutes.

 

DIME BRAND CHRISTMAS CAKE


1 can Dime Brand Condensed Milk
1 pound pecan pieces
8 oz candied cherries
8 oz natural diced candied pineapple
8 oz Dromedary pitted dates
8 oz Angel Flake coconut

Cut cherries in half and the dates into two or three pieces. Use pecan
pieces, not halves. Mix all dry ingredients well and then add the condensed
milk. Mix well.

Use a loaf pan. Line it with waxed paper that has been doubled. Place the
widest piece of waxed paper in the pan first, then the long narriow piece.
(Leave some waxed paper over the edges of the pan as you will have to lift
the cake out of the pan with the waxed paper.) Make a "cap" for the pan of
a piece of brown paper.

Place the well mixed ingredients in the pan and pack them down as well as
you can. (If not well packed, the cake may fall apart.) You may wish to
decorate the top of the cake with cherry halves, pecan halves and green pineapple slices before baking. Cover the pan with the brown paper "cap" while cooking. Bake in oven at 315-325 degrees until browned (approximately one hour, more or less, depending on your oven). When the cake is done,
IMMEDIATELY loosen the waxed papaer from the pan with a non-serrated knife and IMMEDIATELY remove the waxed paper from the cake. Let the cake cool for several hours. This cake slices better when frozen.

NOTE: This recipe was on the label of a can of Dime Brand Condensed Milk in the early 1960's.
